Grilled Salmon with Chimichurri Recipe:
Prepare the grill for medium-high direct cooking.
Remove salmon (four 6 oz fillets, skin on) from the refrigerator.
Make chimichurri: Pulse 1 cup tightly packed parsley, 1/2 cup tightly packed fresh oregano, 2 garlic cloves, juice of 1 lime, 1/2 teaspoon kosher salt in a food processor. (My Pro Tip: Use dried varieties for a convenient Chimichurri mix that can be stored and rehydrated as needed!)
Stir in 1/8 cup extra virgin olive oil.
Brush salmon with oil, season with salt and pepper.
Oil grill grates to avoid sticking. Grill salmon skin side-down for 5-6 mins.
Flip and continue cooking for 3-5 mins or until desired doneness.
Top with chimichurri and serve immediately.
